All three of these are far easier while the walls and the roof are already open. Running cable for cameras, setting panels and mounts, and choosing methods and materials are plan-stage and framing-stage decisions, not things to bolt on afterwards.
That is the real reason to raise them with the contractor who is already doing the build, rather than calling three separate specialists once the drywall is up. Ask the office what makes sense to include while the job is open.
